Bros. Bagels became the first Ocean Friendly Restaurant
in an airport!
What is an Ocean Friendly Restaurant
you ask? These restaurants are committed to making sustainable choices for our oceans. They do not use expanded polystyrene (Styrofoam) or single use plastic bags. They recycle and provide reusable tableware for onsite dining. They also only provide disposable utensils and straws upon request. Ocean Friendly restaurants may also implement other green business practices like conserving water & energy and providing foods with lower carbon footprints
Working with Surfrider Foundation
, the Airport Authority explored opportunities to integrate their national Ocean Friendly Restaurant certification with our own SAN Green Concessions Program
. Since 2017, the Airport Authority has managed the SAN Green Concessions Program to engage and recognize storefronts at SAN that are proactively implementing sustainable business practices. Currently, 54 concessions are certified in the program—72% of all storefronts at the airport. The collaboration with Surfrider educated our concessions managers on ways that they can become "ocean friendly." Additionally, Einstein Bros.' certification serves as a unique partnership model for other airports across North America.
Some of the best practices implemented by Einstein Bros. include: switching to paper straws, adding reusable utensils/cups/plates, posting educational signage, avoiding Styrofoam and plastic bags, and offering vegetarian and vegan options to customers. It is also fitting that Einstein Bros. was the first food and beverage concession certified in the SAN Green Concessions Program.
